This is an excellent soup for this time of year as it is simple and full of fresh greens that your liver will love.

Spring is the season of the liver and of growth and expansion. In spring, we are often compelled to do some sort of “spring cleanse” to shake off winter and welcome the new warmer season.
This recipe is ideal to support the liver.

Broccoli has a pungent and slightly bitter flavour and is cooling in nature. Ideal to sooth the liver which can tend to heat up.

If lightly cooked, broccoli is high in chlorophyll and a natural source of sulfur and iron, plenty of vitamin A for good skin and more vitamin C than citrus. To top it off broccoli is an excellent source of Vitamin B for calming the nervous system. What an amazing creation!

Ingredients:

  • 1tbs olive oil
  • 1 clove of garlic finely chopped
  • 1 head of broccoli cut into small pieces
  • 1/2 an onion sliced
  • salt and pepper to taste
  • 1 cup of rocket
  • 1/2 lemon
  • 2 1/2 cups of water

Method:

Heat the oil in a saucepan over medium heat and add garlic and onion and sauté until soft or for about a minute.

Add the broccoli and cook for about 5 minutes or until it turns bright green
Now add the water, salt and pepper and bring to the boil. Reduce heat to a simmer and leave covered for about 10 minutes.

Pour the mixture into the blender and add rocket and blend until smooth.

Serve with fresh lemon
